Waffles for Dessert

Nicholas's creation...

At my kids' request, like they had to twist my arm, we had fresh waffles for dessert again! We just had these on Saturday night, but how can anyone say NO to an ice cream waffle, topped with fresh strawberries and vanilla ice cream with a bit of fresh whipped cream? Not me!

Waffles:

2 cup All purpose Flour
4 tsp Baking Powder
1 tsp Salt
1 tbsp Sugar
1 1/2 cup Milk
2 Eggs separated
2 tbsp Butter melted

  • Beat the eggs whites until stiff and keep aside.
  • In a separate bowl, beat egg yolks till creamy.
  • Continue the beating, adding milk.
  • Mix all dry ingredients together, add slowly, beating until smooth.
  • Add the egg whites and melted butter.
  • Place 1/2 cup of batter onto a preheated, lightly greased waffle maker.
  • Close lid. Bake until golden about 2 minutes.
  • Repeat with remaining batter.

Cook waffles in an electric waffle iron, following manufacturer's instructions. Waffles should be cooked until they stop steaming, about 3 minutes. Best if eaten hot off the griddle. Top with what your heart desires! Eat!

These can also be frozen and toasted to reheat. Just lay them on a cooling rack and completely cool before freezing.

OR just use ready made pancake mix and follow the waffle recipe.
